人参的主要成分是人参皂甙（ginsenoside），我国科学工作者现已从人参中分离出39种人参单体皂甙。人参皂甙可延缓神经细胞衰老并降低老年发生的记忆损伤，且具有稳定膜结构和增加蛋白质合成作用，可以提高老年人记忆力能力。人参三醇组皂甙内含rg1，rg2，rf，re，rh1等五种单体皂甙，可不同程度地减少体内自由基含量。
