大麦属禾本科植物，是一种主要的粮食和饲料作物，是中国古老粮种之一，已有几千年的种植历史。是世界上第五大耕作谷物。世界谷类作物中，大麦的种植总面积和总产量仅次于小麦、水稻、玉米、而居第四位。中国的大麦现多产于淮河流域及其以北地区。
大麦按用途分，可分为啤酒大麦、饲用大麦、食用大麦(含食品加工)三种类型。（这也是国际贸易中常用的分类方法）二棱啤酒大麦，多棱饲料大麦。
